3 C. apple, peeled and chopped
2 1/2 C. apple cider
3 T. brown sugar, divided
1/2 tsp. ground cinnamon, divided
1/2 tsp. vanilla extract
3 3/4 inch slices french bread, cut into 3/4 inch cubes
Butter flavored cooking spray
8 oz. carton apple cobbler
flavored low-fat yogurt
Combine apple, cider and 2 T. brown sugar in a large saucepan and bring to a boil. Cover, reduce heat and simmer 15 minutes or until apple is tender. Let cool slightly. Pour apple mixture into blender and process until smooth.
Combine apple mixture, 1/4 tsp. cinnamon and vanilla in a bowl and stir well. Cover and chill 2 hours. Preheat oven to 325°. Combine bread cubes and remaining 1 T. brown sugar and 1/4 tsp. cinnamon in a zip-lock plastic bag.
Seal bag and shake until bread cubes are coated. Place cubes on baking sheet that has been sprayed with butter flavored cooking spray. Bake at 325 for 15 minutes or until crisp, turning once. Let cool completely. Combine apple mixture with yogurt and stir well. Ladle into bowls and top with bread cubes.
