1 (4 lb.) pork loin roast
Salt & Pepper to taste
6 Atkins Farms apples, cored
& quartered
1/3 c. apple juice
3 T. brown sugar
1 tsp. ground ginger
Trim excess fat from pork roast. Season roast with salt and pepper, to taste. Brown pork roast under broiler for 2 to 3 minutes and drain well. Place quartered apples across bottom of slow cooker. Set pork loin roast over apples. In a medium bowl, combine apple juice, brown sugar and ground ginger. Mix
well and drizzle over roast in slow cooker. Cover and cook on low setting for 10 - 12 hours. To serve, remove roast and apples from slow cooker and set on a serving platter. Let cool slightly before slicing roast.
